This recipe is my late Grandma's and every time I make it, I think of her.

Chocolate Meringue Pie

Serving Size: 8

1 cup sugar
1/4 cup cornstarch
1 cup boiling water
2 tablespoons butter
1/4 teaspoon salt
3 each egg yolks -- beaten
2 ounces unsweetened chocolate squares
1 each 9 inch pie crust

Cook the sugar, cornstarch, and water together until clear, stirring constantly. Add the butter and the salt. Add the egg yolks. Last, add the chocolate squares and stir until melted and mixed. Pour into a prebaked pie shell (flavor of your choice) and top with a meringue. Bake in a 400 degree oven until the meringue is browned.

Note:  I use a homemade graham cracker crust for this.  They are easy to make using the recipe on the graham cracker crumbs box and taste so much better than the pre-made graham cracker crusts.
